HSCC 2011.5: Delicious foods

For the 5th day of the Harbor Street Christmas Celebration 2011, we share some tasty Recipes. Enjoy!

Recipes from my sister

Microwave fudge
1 box of powdered sugar
1/2 cup of cocoa
1 stick of butter
1/4 cup of milk
1/2 teaspoon of vanilla
1/3 cup of chopped nuts
Mix 1 box powdered sugar with ½ cup cocoa in a microwavable bowl. Put 1 stick of butter on top of powdered sugar/cocoa mix. Add ¼ cup milk.
Microwave 2 minutes on high. Stir and mix well. Add nuts and ½ teaspoon vanilla and stir. Spread on buttered plate. Refrigerate until set.

Mexican Comfort Soup
1 can of chicken broth
1 can of chicken
1 can of chopped tomatoes & mild green chilies
2 stalks of chopped celery
1 chopped medium sweet onion
1/2 bag of baby carrots, sliced thinly
1 teaspoon of butter
1 heaping teaspoon of flour
1 small can of mushrooms
Black pepper to taste

Put a small amount of olive oil in the bottom of a heavy skillet. Turn heat up to medium. Add onions, celery, and carrots. Cook until the onions are transparent. Put in large heavy pot. Add remaining ingredients. Cover and bring to a boil.

Add one teaspoon of butter to the first skillet. Melt butter, and then add a heaping teaspoon of flour. Cook flour until it begins to change color. Drain one small can of mushrooms. Pour the liquid into the skillet. Stir until smooth. Then pour the mixture and the mushrooms into the pot.
Turn the heat down to low. Replace the lid. The chilies will increase in heat the longer they cook, but you can add a small can of chopped green chilies. This will open your sinuses! You can replace the mushroom liquid with 1/4 cup of milk and then add a two-inch block of grated Velveeta cheese to the soup with the thickened roux. Tasty!

Graham Cracker Treat
2 sticks of butter
1 cup of brown sugar
1 cup of finely chopped nuts
1 teaspoon of vanilla
1 box of graham crackers

Mix together 2 sticks of butter and 1 cup of brown sugar. Bring to a boil on medium heat. Boil for 2 minutes. Add 1 cup finely chopped nuts and 1 teaspoon vanilla.
Lay graham crackers in a single layer on a cookie sheet with a ½ inch side. Pour the mixture over the crackers. Bake for 10 minutes in 350 degree oven. Break into pieces.

Baked Macaroni & Cheese
3 1/2 cups of elbow macaroni, about 6 cups, cooked
4 to 6 tablespoons of butter
2/3 cup of coarse bread crumbs
1 pound of shredded cheddar cheese
Salt and pepper to taste
1 cup of milk

Cook the macaroni, drain, and rinse with cold water. Grease the bottom and sides of a 2-quart dish with butter. Sprinkle with bread crumbs. Put in a layer of macaroni, sprinkle with cheese, dot with butter, salt and pepper. Repeat until all ingredients are used up, ending with a layer of cheese. Add milk.

Sprinkle a good layer of bread crumbs over the top. Dot with butter. Bake at 350 degrees for 35-40 minutes. Delicious!
